Protein Carrot Cake!

I like carrot cake, will have to try this next week.

Heres Jamie Aldertons High Protein Carrot Cake Recipe!

Ingredients:

Cake:

  • 120g oats
  • 30g coconut flour
  • 100ml almond milk
  • 200g carrots
  • 50g vanilla protein powder
  • 100g total greek yoghurt
  • 35g pecan nuts
  • 30g coconut oil
  • 3 large eggs
  • 2 large egg white
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • 1 tsp almond essence
  • 1 tsp ginger
  • 1 tsp nutmeg
  • orange zest
  • 6 tsp stevia
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda

Frosting:

  • 500g quark
  • 15g protein powder
  • 200g total greek yoghurt
  • orange zest
  • 3 tsp stevia
  • 15g pecan nuts (for decoration)

Instructions:

  • Blend oats, protein powder, baking powder, spices & sieve into a bowl
  • Add stevia and sliced and diced carrots
  • Add whisked up eggs, add almond and vanilla extract
