Oatmeal Breakfast Bites

These look really good, will have to try them this weekend.

I absolutely LOVE these things! They are one of my favorite make-ahead breakfasts. They also make great snacks!

As I was making them last night I decided I need to share the recipe here because they are super easy, yummy, and healthy.


  • 3 over-ripe bananas
  • 3 cups old fashioned oats
  • 2 eggs
  • 1 cup vanilla soy milk (although any kind of milk would work)
  • 1 tbs baking powder
  • 1/4 cup honey (or a little bit more or less depending on how sweet you want them)

Preheat oven to 350 degrees.

Blend all ingredients in a blender (you can totally skip this and just mash the bananas then mix  everything in a large bowl. I just like the texture when they are blended).

Pour batter into greased cupcake pan.

Add in any extras (blueberries, chocolate chips, nuts, etc.)

Bake for 20-30 minutes. They should be firm to the touch.
